There’s Always Room For Jell-O Shots

Jell-O shots are an easy and creative way to serve alcohol at a party.  You can make them in shot glasses, strawberries, orange slices or even little plastic cups that make it easy to slurp them down.

A Veritable Shot Rainbow

Before we get to the fun stuff with some very cool recipes, take heed. Jell-O shots are small and can taste very sweet, but they pack a good punch as each of them normally contain the same amount of alcohol as one beer, a glass of wine or a shot of your favorite liquor.

Whammo!

If you’re making them for a party, warn your guests to slurp in moderation and if there are children around, make certain they don’t mistake them for treats.

Strawberry Margarita Jell-O Shots

Sweet Tart

Ingredients:
24-30  Large strawberries
1 box Strawberry Jell-O
8 ounces tequila
Cointreau Salt and lime triangles for garnish
Method:
Cut the bottoms of the strawberry flat to get them to stand upright. When you do so, make sure that you do not cut off so much that there is a hole at the bottom. Use a huller or apple corer to empty out the strawberry.
Once the strawberries have been emptied, use a towel to pat the outside of the strawberries dry. Check each strawberry and make sure there is not a hole in the bottom before you start filling.
Boil one cup of hot water in a saucepan,  then add in Jell-O powder and whisk until powder is completely dissolved, about 2  minutes. Set aside.  Measure out 1/4 cup of cold water and set aside. Combine tequila and Cointreau, in cocktail shaker filled with ice. Add liquor mixture to cold water and stir to combine. Then add cold liquor mixture to hot Jell-O mixture and stir to combine. Pour final Jell-O mix into strawberries and chill overnight. Dip your finger in water or use a moistened brush to wet the edge of the strawberries, dip and rotate the strawberries in salt to rim. Garnish with cut lime triangles to finish.

The Rainbow Shot Jell-O Cake

Let’s get this party started!

Ingredients:
4 1/2 cups water
6 packages of 3oz Jell-O in 6 different flavors/colors
6 teaspoons of plain gelatin powder
3 cups of your favorite rum or vodka (keep it as cold as you can.)
1 1/4 cups of vanilla yogurt
Method:
1 – Place your bottle of liquor in the freezer for several hours before beginning recipe.
2 – Spray Bundt pan or gelatin mold with non-stick cooking spray. Wipe off the excess spray with a paper towel. A slight residue should remain, just enough to help unmold your gelatin, without affecting the taste or appearance.
3 – Pour 3/4 cup water into a saucepan and sprinkle with 1 teaspoon of the plain gelatin. Allow gelatin to soak for a minute or two. Heat over low heat, stirring constantly, until gelatin is dissolved (about 5 minutes). Whisk in the first package of flavored Jell-O. Whisk for at least 2 minutes, or until completely dissolved.
4- Remove from heat. Add 1/2 cup of the cold liquor, and stir to combine.
5-  Pour 3/4 cup of the Jell-O mixture into the prepared mold, and place in refrigerator. Allow to set for 15 to 20 minutes, until the gelatin is a little firm, but still sticks when touched. Very important – if the layers set up too much, the next layer won’t bond properly.
6- Refrigerate the remaining Jell-O mixture in bowl about 5 minutes or until slightly thickened. Gradually stir in 3 tablespoons of yogurt and stir until well blended. This cooling step is also important – the Jell-O must be cooled to room temperature before adding on the top of other layers, or the layers will not be well defined.
7 -Gently spoon the Jell-O/yogurt mixture over set Jell-O and return to the refrigerator. Refrigerate about 15 minutes or until Jell-O is set but not firm (Again, it should stick to finger when touched.) As the layers progress, the setting time will become shorter as the pan and gelatin becomes colder, and the layers become thinner as more layers are added to the mold.
8- Repeat steps with remaining Jell-O flavors, for a total of 12 alternating clear and creamy layers.
9- After completing all the layers, refrigerate overnight. To unmold, fill a larger container or clean sink with warm water. With clean fingers, loosen the gelatin around the edges of the mold cavities. Next, dip the mold almost to the edge into the warm water for just a few seconds (10 seconds worked for me). Dry the bottom of the mold with a towel and check the edges to see if they are loose, if not, repeat the dip for just a few seconds. Place your serving plate on top of the mold and invert. Your masterpiece is now ready to serve!
